Carsten Saalwächter is one of the winemakers leading in the new era of German wines. Championing Silvaner, the wines have a phenomenal mix of Burgundian and Jura-esque style. A wonderful play of oxidation and reduction, while always being highly textural. His deep, old cellar is part of the magic, with all the wines fermenting in wood with spontaneous fermentation. A combination of no fining or filtering, and long aging provide time for these beauties to settle into themselves. Minimal SO2 used at bottling.
