François Morente recently settled his newly founded domaine in Volnay. François is a physics/chemistry teacher and a long time musician. He uses this unique blend of art and science to his approach in wine.
He began making wine as a hobby in 2014 out of passion for the vine and for the work behind it. In 2022 he commercialized his first vintage, so although he is a "new" domaine to many, he has years of experience under his belt. In 2014 he managed to take over a third of a
hectare of Hautes-Côtes de Beaune which he planted with Pinot Noir, all at high density of 10,000 vines per hectare.
It's important to mention this because, as far as we know, he's the only one so far to have introduced high density in this appellation! The soil is worked with a horse, the vines are tended exclusively by hand, and disbudding is drastic... In the cellar, the wine is matured for 12 months in barrels and 4 months in vats, with no added sulphites.
