Philippe Pacalet is a celebrated winemaker based in Burgundy, France, known for his dedication to low intervention winemaking and his deep respect for terroir. Mentored by his uncle, the legendary Marcel Lapierre, Pacalet has developed a winemaking philosophy that emphasizes minimal intervention and organic viticulture. He sources grapes from select vineyards across Burgundy, including prestigious appellations such as Gevrey-Chambertin and Puligny-Montrachet. In the cellar, Pacalet employs whole cluster fermentation with native yeasts, avoiding additives and using minimal sulfur to preserve the wines' purity and expression. The result is a portfolio of wines that are elegant, complex, and true to their origins.
