Akishika Shuzō
Akishika Shuzō is a small, independent sake brewery located in Osaka Prefecture, Japan. Founded in 1886, they gained a cult following for their pure, expressive sake made entirely from organic rice grown by the brewery itself. Under the guidance of sixth-generation brewer Masaru Terada, Akishika produces sake that is unpolished in spirit, yet deeply elegant in the glass. It's rich with umami, bright acidity, and a natural vitality. Fermentations are slow and wild, with minimal additions and aging often done in bottle or tank to allow for complexity.
