Following in the footsteps of his family as a winegrower, Paolo has dedicated his focus to one grape, which he feels best represents the terroir of this region—Vitovska.
The incredible cellar is carved out of pure limestone rock next to his house, a good reminder that the vines sit on this bedrock, their roots working hard to drive deep into the cracks.
Inside, the wines are fermented in Georgian qvevri and aged in large wooden barrels. Gentle maceration is the key here, providing structure, depth, and elegance to the wines.
The farming is, of course, organic—given his level of attention to detail in all other aspects of his craft, it makes perfect sense.
