Origine is the first step into Paolo Vodopivec's world of Vitovska, Carso, and Maceration. This skin-contact white wine is a pure expression of person and place. Unlike Paolo's other wines, this sees only wood, no Amphora. The wine jumps with citrus peel and small white floral aromas. The palate is salty, beautifully textured and smooth from the long wood aging. A real gem.

In the heart of the Carso region near the Adriatic Sea, Paolo Vodopivec continues his family’s winemaking tradition with a deep commitment to the native Vitovska grape. He believes this variety is the purest expression of the area's limestone rich terroir. His remarkable cellar, hand carved into the karst rock beside his home, mirrors the rugged landscape where the vines send roots deep into the stone. The farming is entirely organic, reflecting Paolo’s meticulous approach and respect for the land.
