From a high plateau in Saint-Romain with full southern exposure, En Chevrot balances ripeness and precision. The Chardonnay is barrel-fermented and aged on fine lees, giving the wine texture and weight, while simuoultaneously preserving its fine acid line. Citrus, white peach, and a touch of almond come through on the nose, while the palate is a balanced play of tension, richness and minerality shaped by the limestone and white marl soils. Pure and focused, with just enough breadth to round out the finish.

Born in China and raised in Japan, Seiichi Saito moved to Burgundy in 2006 to pursue his passion for wine. After studying in Beaune and spending many years gaining experience with some of the region’s most respected domaines, he founded Domaine Petit-Roy in Chorey-Les-Beaune. Here he farms vineyards across Burgundy and crafts a diverse range of wines, with a focus on the Côte de Beaune. Seiichi has a particular affinity for the Hautes-Côtes de Beaune, seeing it as a key area for Burgundy’s future amid climate challenges. His approach is gentle and respectful, letting the land speak for itself.
