Collection: Domaine Petit-Roy

Born in China and raised in Japan, Seiichi Saito moved to France in 2006 to pursue a career in viticulture. He studied at the wine school in Beaune and gained experience working with esteemed domaines such as Mugnier, Leflaive, Rousseau, and Simon Bize. In 2014, he co-launched the restaurant La Lune in Beaune, known for its precise and elegant cuisine. In 2017, Seiichi established Domaine Petit-Roy, where he applies his diverse experiences to craft wines of purity and energy.

Today, Seiichi's Domaine is based in the village of Chorey-Les-Beaune, and he farms plots around Burgundy, along with purchasing grapes to make a wide variety of cuvées from different appellations. He is particularly fond of the Hautes-Côtes de Beaune as he feels that this is much of where the future of Burgundy lies in the face of a warming and unpredictable climate.

Seiichi's approach to winemaking leans towards the low-intervention spectrum of things. He prefers to let the native yeasts on the grapes and in the cellar work their magic. Fermentation and aging takes place in a mix of used barriques as well as stainless steel tanks. The wines are not fined, but some of the whites can be lightly filtered.

Seiichi's seeks to express energy and vibrancy in his wines, and he knows this begins in the vineyards, but his light touch in the cellar helps the grapes and resulting wines show themselves with so much purity and elegance.
