Vin Noe
Vin Noé was founded by Jonathan Purcell who moved to Burgundy from California to immerse himself in viticulture and winemaking. After studying at the renowned wine school in Beaune, Purcell worked with esteemed producers such as Philippe Pacalet. In 2016, he established Vin Noé, initially sourcing organic fruit from Beaujolais, Mâcon, and the Rhône Valley. By 2021, he took over the vineyards of JJ Morel in Puligny-Montrachet and Saint-Aubin. Purcell practices organic farming with all work being done manually, including plowing with horses. In the cellar, he uses natural fermentation without sulfites or pumps, aging the wines on their lees in old, neutral barrels. The reds are fermented whole cluster in old wooden vats, with longer macerations and deeper extractions than is typical for natural wines.
