Cantillon is a legendary, family-run brewery in Brussels, Belgium, and one of the last remaining producers of traditional lambic beers. Founded in 1900, the brewery is currently run by Jean Van Roy, who continues the legacy of spontaneous fermentation using native wild yeasts. Cantillon ferments and ages its beers in old oak barrels, often blending vintages to create complex gueuzes and fruit-infused lambics.
