Guyot is based in Yonne, home to the northernmost regions of Burgundy.
She has taken over her family farm and begun replanting vineyards where none have existed for nearly a century, following the devastation of phylloxera. Through meticulous research of old maps, she traces the historical vineyard sites, rediscovering lost terroirs.
As she establishes her own vineyards, she also works with winegrowers in nearby villages, sourcing organic grapes from the same parcels year after year. Committed to organic farming, her wines exhibit remarkable freshness and energy—a testament to the importance of reviving and reclaiming forgotten terroirs.
